Chicken Shish Kebab (Shish Tawook)

Ingredients (serves 3-4 people)
800g boneless skinned chicken
1 tbsp paprika
3 tbsp lime juice
5 tbsp olive oil
1 head of peeled crushed garlic
3 tbsp mayonnaise
Salt and pepper to taste

Preparing the Garlic Sauce
Garlic sauce is made by mixing mayonnaise and a lot of fresh garlic. (back home we do the mayonnaise
for the garlic sauce from scratch, but using ordinary ready made mayonnaise taste just as good without
the hassle)

Preparing the Chicken Shish Kebab
Cut the chicken into medium size cubes.
In a bowl mix the paprika, lime juice, olive oil, garlic sauce, salt and pepper.
Marinade the chicken cubes in the mixture for 4-5 hours or preferably overnight.
When ready to cook, thread the chicken pieces on a skewer. Make sure the pieces are firm (you do this
by cramming lots of them on the same skewer).
Then, simply grill (or for better results, charcoal) until the meat begins to brown.

You can grill the skewers on a griddle. If you're using the griddle, heat the griddle first, then add the
chicken. Start with high heat turning the skewers until the chicken is sealed, then reduce to medium heat
& continue turning occasionally until browned and fully cooked.

Serving Chicken Shish Kebab
The chicken kebab can be served with pita bread or with rice and green salad.
